Mastering the Art is such a great way to spend a Saturday. This day is led by one of our experienced trainers and you will spend the day learning how to prepare and cook both fish and shellfish in a variety of ways. A light lunch is served during the course.

The morning starts at a slightly more civilised time and you join us for coffee at 8.15am. We are unable to take a market visit on a Saturday, but we do talk about the operations at the market during an introduction.

The emphasis on this day is not only the seafood (fish and shellfish) prepared, but also some top from an experienced seafood chef on stock and sauce making, various cooking techniques, marinades and flavours that complement the seasonal fish prepared.

We change the species and recipes to suit the seasons, but recently our guests have learnt how to prepare a seabass from whole to fillets, the trendy gurnard (using the bones to make stock), skinning and pin-boning fish to use in a Goan Inspired Curry, preparing mussels and scallops to cook in the shell and making a prawn pilaf to tuck into for lunch.
