Learn about the huge range of species that are available on the market daily and how to tell they are the seasonal best.
After our legendary market breakfast spend an informative and informal morning learning how to prepare and cook our 'Catch of the Day'
You will prepare a number of fish and make a fabulous fish stock. We will talk you through marinades and you create your own for your prepared fish to enjoy for lunch. Using the stock you will make our Billingsgate Fish Stew - that you will take home to feed a family of 4 for supper.
During the day we will share our secrets on the best way to cook several types of fish - be it grilling a mackerel, poaching a fish fillet, roasting a large whole fish and pan-frying.
Bring a pen and paper to write it all down and we will supply a recipe pack for the day.

Learn how to trim, scale, gut and clean, fillet, pin-bone and skin.
A informal, but very informative day exploring the market and learning the tricks of the trade. We aim to give you the confidence to buy and cook more fish at home - everything from buying, storing, preparing and cooking in a number of different and simple ways
You never stop learning and we are all challenged to eat more seafood as part of a healthy diet. If you want to learn some of the basics, feel confident about choosing and cooking a number of different fish - this is a good starting point.
All the fish that you prepare during the course of the day and your Billingsgate Market Fish Stew that will be enough to feed a family of 4.
Please bring cash if you are likely to want to buy extra fish (fresh or frozen) on the day. We have storage facilities for a small number of purchases in our chiller for the duration of the course.
