If you would like to try your hand at some seafood preparation and some classic and global recipes  - this is the course for you. Join the chef trainer team from the school to cover fish preparation techniques and then create a simple first course followed by a more detailed main course

WHAT'S COMING UP


Friday 19th May
Seafood Stock, Sauces and Risotto
Learn how to prepare gurnard, seabream and clams and make a fantastic seafood stock. You will then make a classic Citrus Beurre Blanc to serve with Pan-roasted Seabream. Make a creamy Seafood and Asparagus Risotto to enjoy for supper. The chef team will demonstrate Normandy Seafood Stew. 

Friday 16th June
Summer Seafood: Barbecue's, marinades, Seafood Salad

Create a couple of mariandes and summer dressings to serve with Barbecued Tuna Greek Salad and Scallop and Monkfish Kebabs to enjoy for supper. As well as preparing scallops and monkfish,  you will prepare squid and cod cheeks and create our Seafood Salad to take away. The chef team will demonstrate a Roast Salmon with Oriental Dressing to serve hot or cold as a summer party centre piece.

Friday 28th July
Family Pizza and Seafood Evening * SPECIAL FAMILY EVENING*
Come as a parent and child and make pizza dough, pizzaiola tomato sauce and a selection of seafood to create your own pizza or Calzone. Our chef team will create a couple of pasta dishes to taste including Spaghetti con Vongole and Seafood Cannelloni.

Family Evening payment of £89 entitles entry for one adult and one child (8 years -14 years) 

Friday 11th August 
Classic Fish Evening with red mullet, seabass and plaice

Prepare red mullet or gurnard and create a Rosemary Reduction Sauce to serve with Individual Pommes Anna (layered potato bake). Fillet, skin and pin-bone seabass and plaice to create Pot au Feu de la Mer (lightly poached fish in a reduction sauce with julienne of vegetables). The chef team will demonstrate Seabass in a Salt Crust.


Friday 18th August
Classic Shellfish Evening with Dublin Bay prawns, scallops, clams, crab claws, whelks and winkles

Prepare scallops, Dublin Bay prawns and clams to serve in Saffron and Shellfish Casserole.
Prepare crab and coldwater prawn for Vietnamese Summer Rolls (fresh and vibrant rice wrappers with shellfish, mint and coriander)
The chef team will cook whelks and winkles to serve in a Sea Snail, Seaweed and Sesame Salad

Friday 15th September
Turbot, Oyster and Dover Sole 
Learn how to fillet turbot and skin a small Dover sole. Using the fish frames for stock you will create Poached Turbot with Oysters and Prosecco. You will also learn how to create a pocketed sole to serve with Roast Tomato Salad. The chef team will demonstrate how to fillet a John Dory to serve with Warm Puttanesca Dressing
