Join the Seafood School team to prepare and cook up a storm with the wonderful array of shellfish available on the market.
We know that many people would like to be more confident about preparing shellfish at home. Our aim is to give you all the information that you need to know about choosing, safe storage (and how long for), preparing and cooking a wide range of shellfish so that you can confidently prepare some fabulous shellfish dishes for friends and family.
The morning begins with an inspirational tutored market visit looking at the different categories of shellfish (crustacean and molluscs) and how to choose the best quality.
After one of our popular fish breakfasts you will spend the morning with our team preparing, cooking and tasting a wide variety of species of shellfish.
We demonstrate how to prepare a shellfish stock as part of the course and this will be used in one of the dishes served for lunch.
You will then prepare a number of species to take away to serve as a sharing platter for 4.
This will usually include:
Marinated Cuttlefish with Mint Dressing
Scallops and Samphire 'en papilotte'.
You will prepare a number of other shellfish that the training team will cook as part of an innovation session. These will usually include:
Clams and Mussels Bourride
Prawn and Kale Remoulade
We demonstrate a handful of other dishes including the cooking of a native and Canadian lobster.
We also demonstratate how to both braise and flash fry squid or octopus.
Finally - you will learn how to safely shuck an oyster and enjoy the delights of the flavours associated with Irish or Maldon oysters.

An inspiration, informative and informal morning getting to grips with the preparation and cooking of a wide selection of shellfish. You will learn how to flash fry squid, braise octopus, sear scallops and shuck an oyster and make a fabulous shellfish stock. You will prepare some dishes and taste other dishes prepared by the chef trainers on the day.
Anyone who wants to be more confident about preparing and cooking more shellfish at home. This course is suitable for a beginner and for the more confident cook.

To purchase further fish or shellfish during the morning visit please bring cash. Fresh product can be stored in our chiller for the duration of the course. We have limited freezer space.
