Our UPDATE YOUR SUSTAIN KNOWLEDGE event is a free course (with a small booking fee) for chefs, catering managers, restaurateurs and those within food service. It is an opportunity for interested individuals OR groups from the catering and food industry to have an educational guided visit around Billingsgate Market trading floor during operational hours and to experience the global species on offer, understand quality and to meet the merchants of this iconic market.
A 'fish' breakfast is served in the school kitchens after the market visit.
A sustain update will be led by Head of Sustainability at New England Seafood. Other fisheries will include Norwegian Seafood Council, Alaskan Seafood Marketing Institute and Hastings Fisherman's Protection Society. .
After the lecture our blockman fishmonger and CEO CJ Jacksonwill deliver an informative and entertaining cutting demonstration and tastings session using under-loved species of fish and shellfish.
