Free
fish preparation and cookery courses for local schools, community
and voluntary groups

Billingsgate
School is delighted to be able to offer free courses for the local
community in partnership with the Isle
of Dogs Community Foundation.
Over
50 training courses are available during the next 12 months, this
web page gives an overview of the programme, the main aims and how
to register your interest and reserve places. The areas of benefit
for this project can be seen here by downloading LAP

The
programme offers a range of training opportunities at Billingsgate
School with the main aims of:
Encouraging:
sustainable food consumption, healthy eating at home, access into
employment within the catering and food service sector.

Opportunities
available: Fish for Life, Food For Life, Parents and Kids Tea Club,
Fish 'n' a Dish evening course, Fish to Food Schools courses.
1.
‘Fish for Life', a two day course aimed at those 16+ held
at Billingsgate covering 6 hours of classroom work (which upon passing
a multiple choice exam will lead to a nationally recognised food
safety qualification) and also give experience undertaking practical
fish preparation and cookery. All attendees will receive a Billingsgate
School certificate of attendance.

2.
‘Food for Life' a five day course aimed at those 16+ held
at Billingsgate covering the broader food groups, fish, meat and
vegetables. While also delivering the food safety qualification
‘Food 4 life' includes budgeting, using new ingredients, basic cooking
techniques and knife skills for the three food groups. All attendees
will receive a Billingsgate School certificate of attendance.

The Parent and Kids Tea Club at Billingsgate is a family
learning evening designed to offer the experience of preparing and
cooking an evening meal together . The parent takes the leading
role working with the children in preparing that evening's meal
and sharing that experience together.

4.
Fish ‘n' a dish experiences for community and voluntary
sector organisations. These courses focus on preparation and cooking
techniques for affordable fish. Participants will learn how to assess
freshness and buy fish from Billingsgate Market, then prepare and
cook a variety of fish dishes.

5.
'Fish to Food' classes for local schools. This course invites
a class to Billingsgate to experience how the fish we catch in the
sea is turned into the fish we eat. The course is based around two
sessions, one with a fishmonger the other with a chef. Key areas
covered include where our fish comes from, food safety and healthy
eating.
