Fish Topped Baguettes

2 ready to bake baguettes

Vegetable or olive oil for brushing & drizzling

250g white fish fillets, skinned & pin boned

8 cherry tomatoes, quartered

4 spring onions, finely chopped

1 clove garlic, crushed

½- 1 teaspoon dried basil, or a few chopped basil leaves

3- 4 tablespoons grated Cheddar cheese


How to prepare

Preheat oven 200C/ 180 Fan/400F/Gas 6

Cut the bread in half lengthwise and brush the cut side with oil. Place on a baking tray.

Thinly slice the fish fillets and lay in a single layer over the bread.

Mix together the tomatoes, onions, garlic and basil, drizzle with oil.

Spoon the tomato mixture over the fish and sprinkle with cheese.

Bake for 10 -12 minutes or until golden brown.

Serve with mixed salad
