Garlic and Parsley Mussel Parcels

Prepare 1kg live mussels: wash and remove any barnacles with the back of a knife. Discard any that are cracked or will not shut if sharply tapped.

Cut 2 heart shapes from pieces of good-quality greaseproof paper about 60cm (24") long.

Fold each in half to crease the centre line.

eproof paper about 60cm (24") long. Fold each in half to crease the centre line. Divide the mussels between paper hearts, sprinkle each parcel with 1/2 clove garlic, 1 tbsp chopped parsley and a squeeze of lemon juice.

Season with pepper only and dot each with 15g unsalted butter.

Fold over the greaseproof paper and twist the edges together to form a secure parcel that still allows steam to circulat.

Place on the hot baking sheet and bake in the oven for 4- 5 minutes.

Each person will open their own parcel: advise them to discard any mussels that have not opened.

Serve with plenty of warm bread.
