Pan fried Alaskan Pollock with Miso Dressing


Serves 6

6 Alaskan Pollock fillets

2 tablespoons of vegetable oil

2 spring onions, finely sliced

3 tablespoons miso paste

2 tablespoons dark soy sauce

2 tablespoons sesame oil

3 tablespoons finely grated ginger

3 tablespoons honey

3 tablespoons water

½ lime juice


How to prepare

Pan fry the pollock fillets in the vegetable oil for 2 minutes on each side or until the fish is just cooked, it will have lost its translucency, lift the fish onto a plate and keep warm.

Add the spring onions to the pan and toss over a low heat for 2 - 3 minutes. Mix the remaining ingredients together and pour over the spring onions, stir over a high heat until reduced by half quantity. Add the fish and carefully turn over in the miso glaze. Serve straight away.

Serve with salad leaves.
