250g pasta twists
100g frozen sweetcorn & peas mixed
1 dessertspoon vegetable oil
½ bunch spring onions, finely chopped
2- 3 x 125g cans mackerel in tomato sauce
150g low fat cream cheese
Chopped fresh parsley
Bring a large pan of water the boil, add the pasta, stir and bring to the boil, simmer for 5 minutes. Stir in the frozen vegetables bring back to the boil and continue cooking for another 5 -10 minutes or until the pasta is cooked. Drain and set aside.
Heat the oil in a large shallow pan, cook the spring onions until soft, stir in the cheese.
Drain the tomato sauce from the mackerel and stir into the cheese. Heat gently until the cheese is melted. Stir in the mackerel and cook until piping hot.
Stir in the pasta and vegetables and heat gently if necessary.
Sprinkle with parsley and serve.
