Smoked Fish and Tomato Bruschetta

This recipe is one of the most popular with the children that we work with and they often call it 'fish pizza'!

How to prepare

Take 2 small baguettes and cut in half lengthways. Drizzle with olive oil and arrange on a baking sheet.

Arrange 2 - 3 slices of either smoked mackerel, smoked hake or smoked haddock on top.

Take 4 small tomatoes and cut into quarters, mix with 2 sliced spring onions and arrange on top of the fish.

Sprinkle with a little grated Cheddar cheese or grated Mozzarella.

Bake for 7 - 7 minutes at an oven set at 220C or gas mark 7.

Serve with salad or a seasonal vegetable.
